This salad has some top immune fighting ingredients including: grapefruit, blueberries, red peppers, micro greens, and delicious gouda cheese. This immune boosting salad has what it takes to help keep you healthy until spring has sprung!

Why This Combination Works

Microgreensmicrogreens are nutrient dense, young greens that hold more of their nutrients than their older, more mature counterparts.

Grapefruit- grapefruit is high in vitamin C and other nutrients

Red Peppersred peppers have more than 200% of your daily vitamin C intake

Blueberries– blueberries help reduce damage to our cells with high amounts of antioxidants.

Gouda Cheese- Did you know that cheese is particularly helpful for older adults at keeping the immune system in top shape? Certain cheeses contain more of those all important probiotics that are good for our immune systems, such as: gouda, mozzarella, provolone and others.

So all in all, you can see why this particular salad packs a punch when it comes to boosting your immunity. But most importantly, wash your hands please!

The salad is drizzled with a homemade honey mustard vinaigrette.

Salad Ingredients:

  1. 4 cups of microgreens
  2. 1 ruby red grapefruit
  3. ½ cup fresh blueberries
  4. ½ cup chopped red pepper
  5. ½ cup gouda cheese

Easy Honey Dijon Vinaigrette:

  1. 1 tablespoon dijon mustard
  2. 2 tablespoons apple cider vinegar
  3. 3 tablespoons of honey
  4. ¼ cup extra virgin olive oil

Assembling the Salad:

place micro greens in the salad bowl
