Blueberries– blueberries help reduce damage to our cells with high amounts of antioxidants.
Gouda Cheese- Did you know that cheese is particularly helpful for older adults at keeping the immune system in top shape? Certain cheeses contain more of those all important probiotics that are good for our immune systems, such as: gouda, mozzarella, provolone and others.

The salad is drizzled with a homemade honey mustard vinaigrette.
- 4 cups of microgreens
- 1 ruby red grapefruit
- ½ cup fresh blueberries
- ½ cup chopped red pepper
- ½ cup gouda cheese
Easy Honey Dijon Vinaigrette:
- 1 tablespoon dijon mustard
- 2 tablespoons apple cider vinegar
- 3 tablespoons of honey
- ¼ cup extra virgin olive oil
Assembling the Salad:
- place micro greens in the salad bowl
- peel grapefruit and remove the fibrous skin around the grapefruit pulp
- add blueberries, grapefruit, chopped red pepper and gouda to the top of the micro greens
Easy Honey Dijon Vinaigrette
- combine all ingredients together and stir well
- drizzle vinaigrette over salad and serve!
