Pepper-Jack Fish Cakes

Fish Burger

 1 lb fresh haddock
 1 scallion
 1 egg
 ½ cup seasoned bread crumbs
 ¾ cup shredded pepper- jack cheese
 ¼ tsp salt
 ¼ tsp pepper
 1 tbsp butter
Dipping Sauce
 ½ cup Buttermilk Ranch Dressing
 2 tbsp shredded pepper-jack cheese

Make dipping sauce first by mixing the two ingredients together and cover with plastic wrap. Refrigerate until ready to use.

Pat dry fish and chop into small fine pieces and place in a medium mixing bowl.

Finely chop scallion and add to bowl.

Add in egg, cheese, breadcrumbs and salt and pepper.

Mix well.

With damp hands, shape fish mix into 1/2 inch thick patties. Makes 6 burger sized patties.

These can be made smaller if you are using them as an appetizer.

Melt butter in a non-stick skillet on medium heat.

Add fish cakes and cook for 5 minutes.

Turn fish cakes over and cook for an additional 5 minutes.

Place fish cake on a whole wheat kaiser roll and top with lettuce, tomato and some dipping sauce instead of mayo.
