Beef Up That Salad and Have Yourself a Delicious Low-Carb Dinner!

Salad on its own may not particularly thrill those seeking a more traditional meat and potato type meal. This is why I sided this salad with a delicious beef tenderloin steak. Cooked in red wine, with lemon and a few simple spices, this beef recipe is the perfect compliment to beef up this salad. Did you think that is mashed potato sitting in front of that beef? No, that wouldn’t be low-carb, it’s horseradish cream! Talk about zinging it up a notch.

Horseradish is great for your immune system, especially in the fight against upper respiratory illnesses and urinary tract infections. It also helps our bodies protect itself from many cancers. That’s a good enough reason to add it it into our diets, but watch out for that zing, it can really sneak up on you!

A few basic ingredients, makes fabulous flavor!

Ingredients:

  1. 2 (1 1/2″ ) Angus beef steaks at room temperature
  2. kosher salt
  3. 1/2 cup dry red wine
  4. juice of one organic lemon
  5. 1/2 teaspoon thyme
  6. 1/2 teaspoon rosemary
  7. 1 large garlic clove minced
  8. 1 tablespoon vegetable oil
  9. 1 cup beef stock
  10. 4 cups salad greens ( spring mix)
  11. 1/2 cup sliced cherry tomatoes
  12. 1/2 cup mini sweet bell peppers sliced
  13. 4 tablespoons Italian vinaigrette  

Step by Step Directions:

in a salad bowl mix together spring mix, tomatoes and sweet peppers and set in the refrigerator
salt both sides of the beef and let the beef come to room temperature

in a small bowl, mix red wine, lemon juice, beef broth, spices and the remainder 1/2 tablespoon garlic and set aside

place oil in pan on medium high heat
add 1/2 tablespoon of minced garlic to the pan

add meat and sear for about 2 minutes on each side

Browned steak in a pan

pour the red wine mixture into the pan with the beef

place a meat thermometer halfway into the thickest part of the beef
cook to desired doneness in oven set to 350 ℉ or on stovetop on medium heat ( this steak was cooked to 135℉ for medium rare)

Zing up this recipe by adding some delicious horseradish blend 1/2 cup of whipped whipping cream with 1 tablespoon prepared horseradish and serve as a garnish for the beef
