Roast Beef with Herbed Butter Recipe

Cooking a delicious roast beef doesn’t have to be complicated.   A good top-round cut of beef makes a wonderful dinner and you don’t have to spend the entire day in the kitchen making it.   With the right roast beef recipe, a few simple ingredients, and a little planning, you can have a perfectly cooked roast.

When cooking a roast,  always use a good digital thermometer, like the iGrill2 by Weber. By placing the thermometer right in the center,  or the thickest part of the roast you can get a perfect rare to medium rare center.   This allows cuts of meat with varied doneness for different preferences.   Rare to medium-rare in the middle, well done on the ends.

Fresh butter, thyme, rosemary,  salt and pepper make a simple, yet delicious roast rub.  I’m sure you will love it!

Ingredients:

  1. 4 lbs top-round roast beef at room temperature
  2.  ½ cup butter (softened) 
  3. 1 ½ tbsp freshly chopped rosemary
  4.  1 ½ tbsp fresh thyme
  5. 1 tbsp kosher salt 
  6. 1 tbsp freshly ground pepper

Directions:

Pat dry
  • Save
  • preheat oven to 450 degrees Fahrenheit. 
  • pat the roast with a paper towel until dry
Roast Rub
  • Save
  • mix fresh chopped herbs and salt and pepper with the softened butter.
Rosemary and thyme spice rub
  • Save
  • spread butter mixture over entire roast and place it into roasting pan.

*Vegetables can be added around the roast at this time if wanted.

Roast and Vegetables
  • Save
  • place roast in a preheated oven and then immediately turn heat down to 325℉
  • cook for about 1 hour and 15 minutes, or to the desired cooking temperature

* This roast was removed when internal temperature had reached 135℉. 

Herbed roast beef
  • Save
  • remove roast from oven and let the meat rest for 15 minutes before slicing.
