Good Morning Pumpkin!

Waking up at 3:00 am and quietly sneaking downstairs to snatch up one of these delicious pumpkin breakfast treats was just what I needed to get me through til morning. I am not usually a middle of the night snacker, but last night the flavors of pumpkin and cinnamon and cream cheese were calling my name!

I love the absolutely delicious combination of pumpkin and cream cheese, so, I selfishly added a cream cheese center to these treats. These pumpkin cookie treats are slightly sweet, soft and chewy.

Ingredients:

  1. 2 ½ cups all-purpose white flour + 1 tablespoon set aside
  2. 1 teaspoon baking soda
  3. 1 teaspoon baking powder
  4. 2 teaspoons ground cinnamon
  5. ¼ teaspoon ground ginger
  6. ½ teaspoon ground clove
  7. ½teaspoon allspice
  8. ½ teaspoon salt
  9. ¾ cup granulated white sugar
  10. ¾ cup light brown sugar, lightly packed
  11. ½ cup unsalted butter softened
  12. 1 cup pumpkin puree
  13. 1 large egg
  14. 1 teaspoon vanilla extract

Cream Cheese Center Ingredients:

  1. 8oz package of softened cream cheese
  2. ¾ cup confectioners sugar
  3. ½ teaspoon vanilla extract

Directions:

preheat oven to 350℉in a large mixing bowl whisk together flour, baking soda, baking power, and spices

mix egg, sugar, vanilla, pumpkin and butter until creamy

pour pumpkin mixture into the flour mixture and combine well using a spoon

drop spoonfuls of batter about 1 ½ tablespoons for each onto a prepared cookie sheet, use parchment or grease the pan with butter or margarine

using your thumb dusted with flour, make a thumbprint in the center of the cookie
