Rotisserie Chicken Chili Recipe

When you’re looking for that satisfying cold weather meal, a spicy Chili can be just the thing. This rotisserie chicken chili recipe is a low-fat, diet-friendly version of the traditional beef chili and the perfect “keep your resolution ” gameday alternative.

The fresh rotisserie chicken and the unique spice combination gives this chili a rustic flavor that is perfect to warm up those chilled bones following your favorite winter activities.

This recipe has a mild heat, so a great choice for a Superbowl party!

Ingredients:

  1. 1 rotisserie chicken with meat removed from bone ( about 2 cups)
  2. 1 tablespoon vegetable oil
  3. 1 cup chopped onion
  4. 2 cloves of garlic minced
  5. 2 cups chopped celery
  6. 2 (28 oz.)cans crushed tomatoes
  7. 1 (15 oz.) can black beans
  8. 2 (15 oz.) cans of red kidney beans
  9. 1/4 cup chili powder
  10. 1 teaspoon cumin
  11. 1 teaspoon coriander
  12. 1 tablespoon paprika
  13. 1 teaspoon red pepper flakes
  14. 1 tablespoon kosher salt
  15. 1 teaspoon thyme
  16. 1 teaspoon oregano

How to prepare:

saute´onion, garlic and celery
  • Save
  • add vegetable oil to a 6-quart saucepan
  • on medium heat, saute´ onion, celery, and garlic until the onion is translucent
  • Save
  • add crushed tomatoes

  • Save
  • rinse and drain all beans, and add to the pot

  • Save
  • add all the spices and salt
  • Save
  • cover and simmer for 20 minutes
  • add chopped chicken
  • cover again and simmer for another 30 minutes

*if chili gets too thick, add a small amount of water or vegetable broth to thin it
