Ingredients:
- 1 rotisserie chicken with meat removed from bone ( about 2 cups)
- 1 tablespoon vegetable oil
- 1 cup chopped onion
- 2 cloves of garlic minced
- 2 cups chopped celery
- 2 (28 oz.)cans crushed tomatoes
- 1 (15 oz.) can black beans
- 2 (15 oz.) cans of red kidney beans
- 1/4 cup chili powder
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 tablespoon paprika
- 1 teaspoon red pepper flakes
- 1 tablespoon kosher salt
- 1 teaspoon thyme
- 1 teaspoon oregano
How to prepare:

- add vegetable oil to a 6-quart saucepan
- on medium heat, saute´ onion, celery, and garlic until the onion is translucent

- add crushed tomatoes

- rinse and drain all beans, and add to the pot

- add all the spices and salt

- cover and simmer for 20 minutes
- add chopped chicken
- cover again and simmer for another 30 minutes
*if chili gets too thick, add a small amount of water or vegetable broth to thin it
