Roast Rub Ingredients

Cooking a delicious roast beef doesn’t have to be a complicated thing.   A good top-round cut of beef makes a wonderful dinner and you don’t have to spend the entire day in the kitchen to make it.   With the right roast beef recipe, a few simple ingredients, and a little planning, you can have a perfectly cooked roast.

When I cook a roast,  I use a good digital thermometer, the iGrill2 by Weber.

I place the thermometer right in the center,  or the thickest part of the roast then I cook the roast until the center reaches rare to medium rare.   This allows cuts of meat with varied doneness for different preferences.   Rare to medium-rare in the middle, well done on the ends.

This roast is rubbed with butter, fresh thyme, rosemary,  salt, and pepper.  I’m sure you will love it!

Rating

 4 lbs top-round roast beef at room temperature
 ½ cup butter (softened)
 1 ½ tbsp freshly chopped rosemary
 1 ½ tbsp fresh thyme
 1 tbsp kosher salt
 1 tbsp freshly ground pepper

Preheat oven to 450 degrees Fahrenheit.

Pat dry the roast beef with a paper towel.

Pat dry

Mix fresh chopped herbs and salt and pepper into softened butter.

Roast Rub

Spread butter mixture over entire roast and place it into roasting pan.

*Vegetables can be added around the roast at this time if wanted.

Rosemary and thyme spice rub

Place roast in preheated oven and then immediately turn heat down to 325 degrees Fahrenheit. Cook for about 1 hour and 15 minutes, or to desired cooking temperature.

* This roast was removed when internal temperature was 135 degrees F.

Remove roast from oven and let the meat rest for 15 minutes before slicing.
