Who doesn’t love pizza?  So many varieties to choose from like Margherita, Hawaiian and even your basic pepperoni and cheese.  Pizza is one of those totally satisfying perfect foods.   It seems to appeal to all kinds of different appetites.  For the meat lovers, cover that pie with sausage, pepperoni, and ham.   Veggie lovers,  just some green peppers, mushrooms and olives for you. Cheese enthusiasts, spread three kinds of cheese on there and you have a masterpiece!  See what I mean? It satisfies even the pickiest eaters!

Why Make Homemade Pizza Dough?

Well sure, you could pop a Delicioso into the oven or place a call to the local pizza joint, but it will never be as satisfying as biting into a light and crispy homemade pizza crust that you made with your own hands.  Besides, making your own crust gives you all the bragging rights.  As we all know, the crust can make or break a perfectly good pizza pie.  Soggy…no thanks;  Dripping with oil…so unappealing,  just light and crispy bread dough for me.  Not to mention fun to make.  Being able to customize your pizza with extra cheese on one side,  and anchovies on the other, or what have you, makes it all worthwhile.  The opportunities are endless!

Why Flour Matters.

When it comes to making your own pizza dough, all flours are not created equal.  Trust me on this one, I have made pizza dough with white all-purpose flour, unbleached flour, and whole wheat flour. But none of those crusts compare to when I use a high quality bread flour. High protein flour with higher gluten is what makes pizza dough made with this type of flour so good. It makes a sticky, stretchy bread dough.  Making your pizza crust crispy on the outside and soft and chewy on the inside. The best results when I use Bob’s Red Mill Artisan Bread Flour. I also use this flour in my Italian Bread recipe.

Ingredients:

  1. 1 cup warm water 
  2. 1 tsp Instant yeast 
  3. 1 tsp sugar
  4.  2 cups bread flour 
  5. 1 tsp salt

Making the Pizza Dough:

Combine water, yeast, and sugar in mixing bowl. Let sit until foamy

Sift together salt and flour and add to mixing bowl. Mix together on low speed for 2 minutes using a dough hook attachment.

Turn mixer up to next speed and continue mixing for 5 minutes, or until dough is soft, stretchy and pliable.

  • Dough will pull completely away from the sides of the bowl and form a ball when ready

If you're not using a stand mixer, knead dough by hand for 10 minutes on a lightly floured surface.

  • Cover with a damp towel. Put dough in a warm spot and allow to rise for about an hour. Dough should be doubled in size.
