
Healthy vs. Happy
We are all trying to keep that balance between healthy and happy. Sure we could eat twinkies all day and be really happy, but not so healthy. Or, we could eat kale all day and be really healthy….but not so happy. Finding that balance is really what it is all about. So yes, you can have your cake ( or should I say pie) and eat it too!
Blueberries
You can’t ask for anything healthier than blueberries. Did you know that blueberries are considered one of the world’s most healthiest fruits? https://www.healthline.com/nutrition/20-healthiest-fruits#section2 There are so many nutritious benefits of eating blueberries that we should be trying to incorporate more of them into our daily diet. I like to add them to a salad of mixed greens with balsamic vinegar dressing, or just grab a handful out of the fridge when you are craving something sweet. No matter how you like to eat them you can’t go wrong with blueberries. Sweet, tart and delicious, a perfect fruit.
Greek Yogurt
What is so great about greek yogurt? Creamy, smooth and refreshing but most importantly…protein. Greek yogurt, on average has double the amount of protein of regular yogurt. Protein leads to lean muscle. Strong muscles burn fat. Its that simple. Add more protein!
The Inspiration
Yes I am a firm believer in balancing lifestyle. It’s the give and take of choices we make everyday to stay healthy, fit, and happy. I like dessert as much as the next person, but I don’t eat it everyday…or every other day. I have it on occasion. This recipe I created to add a little “healthy” into dessert. It’s not overly sweet, and has a fresh, light and creamy taste you will love!

This Blueberry Yogurt Pie is the perfect summer dessert. It is light and refreshing full of good for you ingredients. So delicious!
Rinse blueberries in strainer with cold water and drain well.
Mix gelatin packet and sugar in a heat resistant bowl. Add boiling water and stir until all sugar and gelatin is dissolved.
Let cool
Blend the Greek Yogurt with the gelatin mixture with a mixer on medium speed until evenly blended.
Fold blueberries into yogurt mixture.
Pour mixture into graham cracker crust.
Refrigerate for 3 hours or until set.
Top with your favorite whipped cream and enjoy!!
