
Pepper-Jack Fish Cakes
You wouldn’t think fish cakes could be perfect for so many occasions but they really are. Do you want a delicious hot appetizer for entertaining? Do you need a perfect light, main course summer meal to accompany a salad? Or maybe you are just looking for a nice change from burgers? I found this recipe in “ All You Need is Cheese” magazine that I picked up in a Canadian grocery store. It is so delicious I had to share it!
Haddock
I like to use haddock in this recipe as it has a less fishy taste that appeals to most appetites. It is also readily available here in New England. I haven’t made this with tuna, but I am sure it would make a good substitute.
Use the following recipe in all three circumstances, made very quick and easy and it can also be prepared ahead of time to be cooked in just a few minutes.
A Recipe for all Occasions
I love it when you find a recipe you can use over and over again. Here are some ideas and I am sure there are many more if you are creative!
- Make as an appetizer for entertaining, served with a dipping sauce – when you need a hot appetizer to be served to hold your guests over before dinner, just make these into smaller appetizer-sized portions. These will surely get your guests’ appetites ready for the main course!
- Use it as a main course and side it with greens and roasted potatoes- or if you’re looking for a diet-friendly option, try skipping the sauce, place on a bed of your favorite greens.
- A delicious fish burger- place these fish cakes on a kaiser roll topped with lettuce and tomato…so good!
The possibilities are endless. Once you try these you will come back to them time and time again!

Make dipping sauce first by mixing the two ingredients together and cover with plastic wrap. Refrigerate until ready to use.
Pat dry fish and chop into small fine pieces and place in a medium mixing bowl.
Finely chop scallion and add to bowl.
Add in egg, cheese, breadcrumbs and salt and pepper.
Mix well.
With damp hands, shape fish mix into 1/2 inch thick patties. Makes 6 burger sized patties.
These can be made smaller if you are using them as an appetizer.
Melt butter in a non-stick skillet on medium heat.
Add fish cakes and cook for 5 minutes.
Turn fish cakes over and cook for an additional 5 minutes.
Place fish cake on a whole wheat kaiser roll and top with lettuce, tomato and some dipping sauce instead of mayo.
Serve hot with dipping sauce on the side.
