Baked Chicken Pot Pie

Cooking for a large family can be difficult at best.    Making a meal that is hearty, healthy and satisfying that appeals to all can be nearly impossible.  That is why finding a perfect casserole recipe or large pot meal that everyone loves can be invaluable.

Hearty and Delicious

Chicken Pot Pie is one of those meals.  I am not talking about a 9″ round pie here, but rather, a large 9″ x 11″ casserole dish sized pie.  Enough to easily serve 8 for dinner or maybe for a potluck meal to take to work.  Who can say no to that flakey homemade pie crust?

I like to make this pie with fresh vegetables, not frozen. In a pinch, frozen veggies can easily be substituted in to save time but please don’t opt for frozen roll out pie crust. Besides, homemade pie crust really doesn’t take that long to make and it always tastes so amazing!  If you have difficulty rolling out pie crust,  I have a few foolproof tips that make rolling out pie dough a piece of cake. Try these tips How to Make a Perfect Pie Crust.

Many chicken pot pies recipes call for cream.  I prefer to leave the cream out and opting for the healthier option by using chicken stock thickened by a small amount of flour for a creamy texture without the added fat. Try this “stick to your ribs” meal and you and your family will not be disappointed!
